Founded in 2026, Merienda Bakery is a welcoming place for the community to gather over fresh pastries, bread, light breakfasts, and lunch.
Each morning, we open our doors with a counter full of carefully laminated pastries, fresh seasonal ingredients, and single-origin coffee from Oaxaca, Mexico.
About
Owners Josh and Ileana Parkinson met while working in a bustling Mexico City restaurant, where they fell in love before eventually returning to Josh’s hometown to bring their fresh flavours to Beverley.
